Ratatouille is a super-healthy French side dish that can be eaten hot or cold with meat or fish.
1Cut all the vegetables. Heat oil in a casserole. Saute garlic and onions. Add zucchini, peppers, eggplant. Stir and simmer over low heat 30 minutes, stirring occasionally.
2Pour the tomato sauce and cook for 10 minutes. Add salt and pepper and sprinkle with chopped fresh basil before serving.
You can keep the skin of the eggplant if you like. You can also season with rosemary and paprika.
